Whether it's bananas, mangos, apples or pears, Brisbane has it's fair share of fresh, exotic fruits to choose from....
This is essentially a milkshake or smoothie made with mango
and yoghurt and just as easy to make. You can pulp the mango and freeze it in single serving sizes, ready to use as you need it. This is the perfect recipe for the 10 mangoes we bought at the Rocklea Markets for just $3.00 as by freezing the pulp, there was no wastage.
Ingredients
1 cup plain yoghurt
1/2 cup milk
1 cup chopped mango, peeled and
stone removed
Honey to taste
Method
1. Put mango, yoghurt, milk, sugar
and honey into a blender and blend until smooth.
2. Pour into individual glasses,
serve chilled.
Makes about 2 cups.
For
something a bit different, added mashed banana for a wholesome, quick breakfast
drink.

Ingredients
3 cups of pitted and coarsely
chopped purple plums
1/3 cup sugar
1/3 cup water
2 teaspoons lemon juice
2 Tablespoons honey
Method
1. Combine the plums, sugar, water
and lemon juice in saucepan.
2. Bring to boil, reduce heat,
maintaining the boil.
3. Stir and mash occasionally with
back of spoon for about 15 minutes, or until thickened.
4. Remove from heat, stir in honey.
5. Allow to cool to room
temperature. Refrigerate in tightly covered jar for up to 2 weeks.
Makes approximately one cup jam.
Having bought a box of peaches for just $3.00 at Saturday's Rocklea Markets, I put our thinking caps on to come up with a recipe. Here's one that is simple yet delicious.
Ingredients
12-14 small peaches, peeled and sliced
Tablespoon lemon juice
1/2 cup self-raising flour
3/4 cup rolled oats
1/2 cup brown sugar
¼ cup dessicated coconut
1/3 cup margarine or butter
Method
1. Place peaches in baking dish and sprinkle with lemon
juice.
2. Mix flour, oats, coconut and brown sugar.
3. Mix in margarine or butter using fingers.
4. Press mixture over peaches, sealing peaches in baking
dish.
5. Bake at 170C for approximately 30 minutes or until
peaches are tender and crumble is golden brown
Serve with ice cream or cream.
